Potatoes get a bad wrap, according to research from the University of Washington.
In a recent study, the scientists assessed the nutritional quality of nearly 2,500 carb-rich foods. And the finding? Potatoes scored nearly as well as whole fruit.
So remember: The problem with potatoes isn’t the potato itself.
It’s the way we typically consume them.
Think: deep fried or slathered with sour cream and butter. Or as chips that have been heavily processed and engineered to be irresistible.
By themselves, potatoes are not only highly nutritious, but they’re also one of the most filling and satisfying foods you can eat.
