Serves: 2

Ingredients

For the pancakes

  • 1 large sweet potato, cooked and mashed

  • 225g egg whites

  • 30g vanilla protein powder

  • 35g ground flaxseed

  • 2 tsp baking powder

  • ½ tsp vanilla extract

  • ⅛ tsp ground cinnamon

  • 1 tbsp coconut oil, for cooking

To serve

  • 2 tbsp chopped pecans

  • 2 tbsp maple syrup

Method

  1. Blend all of the pancake ingredients, except the coconut oil, with ⅛ teaspoon of salt until smooth.

  2. Heat the coconut oil in a non-stick frying pan over a medium-high heat.

  3. Pour one-quarter of the batter into the pan and cook for 2–4 minutes until bubbles appear in the centre.

  4. Flip and cook for a further 2–3 minutes until golden brown.

  5. Repeat with the remaining batter to make two large pancakes per serving.

  6. Serve warm with chopped pecans and maple syrup.

One serving = two large pancakes.
